1 onion
4 cloves garlic
1/2 cup oil
2 carrots
2 squashes
1 parsnip
1 celery stalk (or 1/4 knob celery)
1 turnip
2 tablespoons salt
pinch of white pepper, to taste
paprika, for color
Heat oil in an eight-quart pot.
Blend the onion and the garlic, add to the pot and sauté.
Blend one carrot and one squash, add to the pot and sauté.
Coarsely grate one carrot, one squash, and the parsnip. Add to the pot and sauté for 40 minutes on medium flame, stirring frequently.
Dice the celery and turnip, add to the pot and sauté for five minutes.
Fill pot three-fourths with water (or add 15 cups of water).
Add spices, bring to a boil, and cook for 30 minutes.
