Place sour cream in a cheesecloth, tie closed, and hang over a bowl or basin overnight. (Hanging from the kitchen sink faucet is the typical way to do this.)
In the morning, transfer the hardened cheese to a container. Combine with salt, scallions, garlic powder, onion slices, or any combination of desired flavorings.
