Yield: 16 granola bars
1 cup creamy peanut butter, such as Gefen
2/3 cup Gefen Honey
1 teaspoon vanilla extract
1/2 teaspoon salt
2 and 1/2 cups rolled oats
1/2 cup dried cranberries/pumpkin seeds/sunflower seeds/cashews (I used all)
Line two eight-inch pans with parchment paper and set aside.
Place peanut butter in the microwave until you can stir it, approximately 30 seconds. Stir all ingredients together with a greased gloved hand and press evenly into pans. Freeze for two hours to harden, then keep refrigerated.
