Ingredients

Cupcakes

  • 2 teaspoons baking powder

  • 2 teaspoons baking soda

  • 2 teaspoons vanilla

  • 2 and 3/4 cups flour

  • 3 eggs

  • 1 teaspoon cinnamon

  • 1 cup honey

  • 1 teaspoon ginger (optional)

  • 1 cup sugar

  • 1 cup warm coffee

  • 1/2 cup oil

Directions

Prepare the Honey Cupcakes

1.

Beat eggs and honey together.

Add sugar and mix again.

3.

Mix baking soda into coffee, then add with oil to egg mixture. Add remaining ingredients and beat together well.

4.

Bake the cakes at 325 degrees Fahrenheit for 55 minutes.
