Simple and delicious – this is an extremely versatile recipe. You can use any root vegetables you’d like!
1 1-pound box of rainbow carrots, washed and peeled
1 medium sized sweet potato, cut into wedges
1 medium sized Idaho or russet potato, cut into wedges (optional)
1 clove garlic, minced
1 tablespoon paprika
1 tablespoon Manischewitz Honey
1/2 teaspoon sea salt
1/2 teaspoon cinnamon
1 tablespoon freshly grated ginger
2 tablespoons Gefen Extra-Virgin Olive Oil
Preheat oven to 375 degrees Fahrenheit.
Spread vegetables over parchment-lined baking sheet.
Mix together remaining ingredients and coat vegetables, making sure that the dressing is evenly distributed.
Baked for about 45-50 minutes, mixing around halfway through, until tender with a fork.
