In a bowl, combine the honey, mustard, and soy sauce. Pour the sauce over the chicken. Let it marinate for at least 20 minutes or overnight.
In a large skillet, heat the oil over medium heat and sauté the onions until tender. Stir in the garlic and add the chicken pieces.
Sauté until the chicken is fully cooked, about 7 to 8 minutes per side.

This recipe works just as well with up to 1½ pounds of chicken. If you’re cooking for a larger crowd, increase the rest of the ingredients to match.
