Diets My friend Sara L. has a way with sweet potatoes; just about any food that contains this delicious spud works for her. This is one of her keepers.
3 sweet potatoes, unpeeled and scrubbed clean
3 tablespoons oil, such as Gefen Canola Oil
1/4 cup Gefen Honey
Gefen Dried Cranberries, chopped (optional)
sliced scallions (optional)
In a pot, boil whole sweet potatoes for 10–12 minutes.
Allow sweet potatoes to cool, then peel off skin and slice into long strips.
Dip strips into oil and then honey.
Lay on baking sheet and bake at 400 degrees Fahrenheit for about 15 minutes or until golden.
Optional: Serve with cranberries and scallions on top for added color and flavor.
