Prepare the Hot Marinated Eggplant Salad

1. Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper.
2. Place eggplant slices in a single layer on baking sheet. Sprinkle with salt and drizzle with oil.
3. Bake for 25 minutes or until edges are brown.
4. In a small bowl or cup, whisk together sugar and vinegar.
5. Place eggplant, pepper, and garlic in a container. Pour liquid mixture over and lightly shake the container for even coating.
6. Allow to marinate for at least 30 minutes.
