Hot Marinated Eggplant Salad

Ingredients

Hot Marinated Eggplant Salad

  • 1 eggplant, sliced into half circles

  • 1/2 teaspoon salt

  • 3 tablespoons oil

  • 2 tablespoons sugar

  • 2 tablespoons vinegar

  • 1 jalapeño pepper, sliced thinly

  • 3 cloves garlic, such as Mr. Dipz Peeled Garlic, sliced thinly

Directions

Prepare the Hot Marinated Eggplant Salad

1.

Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper.

2.

Place eggplant slices in a single layer on baking sheet. Sprinkle with salt and drizzle with oil.

3.

Bake for 25 minutes or until edges are brown.

4.

In a small bowl or cup, whisk together sugar and vinegar.

5.

Place eggplant, pepper, and garlic in a container. Pour liquid mixture over and lightly shake the container for even coating.

6.

Allow to marinate for at least 30 minutes.

Delicious – have done both with and without the hot pepper.

Love making this each week, but ever since the new site relaunch I can’t find the ingredients listed here. Only the direcitons… Help!
