This recipe takes blintzes up a notch. Stunning for an appetizer, dessert or buffet table!
1 cup flour
1 T cocoa
2 T sugar
1/2 vanilla sugar
4 eggs
1 T oil
1 cup milk
1 tsp butter for pan plus more if necessary
1 lb farmer cheese
1/2 cup whipped cream cheese
3 T sour cream
2 T milk
1/2 cup sugar
2 tsp vanilla sugar
caramel shpritz
milk
Combine blintz ingredients. Heat a coated frying pan and melt the butter. Pour a 3/4 ladle with batter and cook 1 minute on the first side and 30 seconds on the second side. Repeat with all the batter, adding more butter to the pan only if it is very dry.
Combine cheese ingredients. Smear a thin layer of cheese on the blintz and top with another blintz. Repeat until you have 6 layers. Spray a 3-inch round cookie cutter with oil and cut circles, spraying after each one for a smooth cut. Dilute caramel shpritz with milk and fill a disposable pipette for a nice touch.
