Kale and Sun-dried Tomato Faux-shuka. Though that may sound like a mouthful it’s actually super easy to make. By utilizing salsa in lieu of a homemade tomato sauce this took no time to prepare and the flavors and textures in this dish hit every tastebud.

Start Cooking

Prepare the Faux-Shuka

  1. Sauté onion and garlic until onion is translucent.

  2. Add kale and cover so kale will wilt quickly. Cook for about three minutes.

  3. Add sun-dried tomatoes and sauté for five minutes.

  4. Add salsa and water and combine. Add seasonings.

  5. Make four to six wells and break eggs into wells. Cover pan and let cook for about three minutes until whites are set and yolk is still runny.
