Ingredients

Kohlrabi “Coleslaw”

  • 4 carrots, shredded

  • 1 large kohlrabi, shredded

  • boiling water, to cover

  • 5 tablespoons mayonnaise

Directions

1.

In a bowl, toss the kohlrabis and carrots together. Cover with boiling water and let sit for five minutes. Drain well.

2.

Add the mayonnaise, sugar, and lemon juice. Mix well to coat the vegetables evenly.

3.

Serve right away, or store in an airtight container in the refrigerator for up to two days.
