Substitute Kolhrabi for potatoes for a low-fat Shabbos kugel.

Ingredients

  • 2 Kohlrabi

  • 1 onion

  • 3 eggs

  • 1-2 T flour

  • 1/4 cup oil

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1/4 tsp. garlic powder

  • 1/4 tsp cumin

  • Bunch of fresh parsley

  • Bunch of fresh coriander

  • chopped walnuts

Directions

Prepare the Kugel

1.

Grate kohlrabi and onions. Add oil, eggs, flour and spices. Place in dish.

2.

Chop parsley and coriander with walnuts and layer on top.

3.

Bake at 350F for approximately 45 minutes.
