I know that so many people enjoy a good slaw with their meat and chicken, but don’t use cabbage on Pesach. This is my version of the perfect slaw to round out the meal.
3 medium kohlrabi, cut into thin matchsticks
2 apples, cut into thin matchsticks
1 teaspoon Bartenura Olive Oil
juice of 1 lemon
1 teaspoon Gefen Honey
1/4 teaspoon salt
dash black pepper
1/4 cup chopped walnuts
Combine kohlrabi and apple in a medium bowl.
In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper. Pour over kohlrabi and apple. Toss to coat. Top with chopped walnuts.

Kohlrabi Slaw Do you know if I can make this salad beforehand like a day before? Should I put the sauce on already or only before serving? Thank you
The kohlrabi is pretty hearty. The apples might get mushy though.
