Arayes are all the rage in the Jewish food world. They’re incredibly easy to make and incredibly flavourful! Here, I made them with lamb – if you love lamb as much as I do, you have to try them.
1 pound minced lamb
1/4 cup fresh parsley, chopped
1 tablespoon fresh mint, chopped
2–3 cloves garlic, pressed through garlic press or 2-3 cubes Gefen Frozen Garlic
2 teaspoons shawarma seasoning
1 teaspoon Pereg Cumin
1 tablespoon Pereg Za’atar
1/2 teaspoon sumac
1/2 teaspoon Gefen Cinnamon
1 teaspoon smoky paprika
1/2 teaspoon salt
freshly ground Gefen Pepper
4–5 medium sized pitas
oil
Mix together all ingredients except pita.
Stuff inside the pita and squish pitas to evenly distribute meat. Brush pitas with oil.
Grill over medium heat until nicely browned on both sides (I check for doneness with a meat thermometer).
