Diets These chicken satays are marinated in a delicious sweet and sour marinade. This keeps the meat juicy and moist and also adds so much flavor. The best part is that you can serve this dish hot or cold; just drizzle the remaining marinade over the chicken satays right before serving.
1/2 cup oil, such as Gefen Canola Oil
1/2 cup Gefen Honey
1/2 cup lemon juice, from about 2 medium lemons
1 tablespoon mustard
1 tablespoon soy sauce
1 teaspoon Gefen Toasted Sesame Oil
6 cubes Gefen Frozen Dill
4 cubes Gefen Frozen Garlic
salt, to taste
pepper, to taste
12 lemons, thinly sliced
2 pounds chicken, cut in 24 (1-inch) cubes
fresh dill, to garnish
12 (4-inch) skewers
In a jar, combine oil, honey, lemon juice, mustard, soy sauce, sesame oil, dill, garlic, salt, and pepper. Seal and shake well.
In a bowl, pour half the marinade over the chicken and cover. Marinate at least two hours and up to overnight. Reserve the rest of the marinade in the fridge for use in step 5.
Thread chicken and lemon slices onto skewers: chicken, folded lemon, chicken.
Grill four to six minutes per side.
Just before serving, drizzle reserved marinade over the skewers. Garnish with fresh dill.
