1. Preheat oven to 400 degrees Fahrenheit.
2. Spray a large pan with nonstick spray. Add the zucchini, rice, and water.
3. Place the chicken on top of the rice. Drizzle on the lemon juice and spices. Cover the pan tightly with foil and cook for 45 minutes. Then uncover and cook for another 15 to 20 minutes until the top of the chicken is browned.
