Watch the video here! These are one of my favorite easy treats to make. I make them in batches and put them in the freezer- you never know when someone's going to pop around! During the Great Lotus Craze of 2016 everyone bought this awesome cookie butter by the case! Check out this super easy and delicious dessert that will make you fall in love with it all over again.

Lotus Biscoff Cookie Butter Bars

Start Cooking
Make the Batter

Combine the flour, sugar, oil, egg and vanilla in a medium bowl. The dough should be a little crumbly.

Spread and pat down about 3/4 of the dough into a greased 9x13 pan, saving the remaining dough for the topping. The dough should be ¼ inch thick once it’s pressed in and the dough is firm.
Spread the Topping

Place the Biscoff Cookie Butter in a microwave safe bowl and microwave for 15 seconds to help soften the butter.

Spread all the cookie butter over the dough, then sprinkle the remaining dough and crushed Lotus biscuit all over the dough.
Biscoff brand products, including Lotus Cookies, that are made in Belgium and are imported and sold in the US and Europe do not have a hechsher (kosher certification). Biscoff brand products that are produced for Israeli distribution are kosher and do have a hechsher in many kosher food stores around the world as an import from Israel. Please check products carefully for kosher certification before purchase.
Bake and Serve

Bake at 350 degrees Fahrenheit for 30 minutes.

Once the bars have cooled slightly, cut them into squares.

Crowd Pleaser!
I baked these for a family gathering and these bars were such a crowd pleaser, no one believed how easy they were to make! I was told never to make them again because they are too good...well, I know what I'll still be making next time! -
Crunchy and yum!!
These were super easy and greatly enjoyed!! Since I don't have a microwave, i just spread the lotus butter on the dough, it worked fine. -

you list 2 cups of biscoff butter in the recipe but in the directions you say to microwave one cup of the butter. what happened to the other cup what do you do with that. thank youReplies:Naomi says it's about 1-2 cups. Depending on the size of the dish.
