Submitted by Esther Berger This is a hearty and healthy recipe that will bring all kinds of different textures and flavors. It is light and low calorie, yet quite savory and extremely satisfying!
1 box cooked pasta (I used “rotini lite”)
1 bag frozen cauliflower
1 box grape tomatoes, halved
2 cups spinach
3 cloves garlic, diced
4 salmon filets
1/2 cup dijon mustard
1/4 cup mayonnaise
1/4 cup maple syrup
2 tbsp parsley (fresh or dried)
Umani seasoning (Trader Joes!)
2 tsp onion powder
1 Pam oil spray
2 TBSP apple cider vinegar
Optional grated parmesan cheese for sprinkling
Set oven to broil
Sprinkle each salmon filet with salt and pepper. Mix mustard, maple syrup, and mayonnaise and spread evenly on each salmon filet. Sprinkle filets with parsley. Broil 15 minutes.
Spray cauliflower with Pam. Sprinkle with salt, pepper, onion powder, and umami seasoning. Broil for 25 minutes (can overlap with salmon).
In a pan, sauté halved grape tomatoes and diced garlic in Pam, salt, and pepper.
Heat up cooked pasta in a pot. Add apple cider vinegar. Stir. Add spinach, tomatoes, and roasted cauliflower.
Place pasta mixture in a bowl, top with salmon, and sprinkle with parmesan cheese if desired. Enjoy!
