This crunchy granola recipe from my mother is addictive! Anyone who tries it asks for the recipe. It’s a refreshing change from sugary, unhealthy breakfast options.

Ingredients

Main ingredients

  • 1 container old fashioned oats (about 20 oz)

  • 1/2 cup oat bran

  • 1/2 teaspoon salt

  • 1 6-oz package chopped pecans

  • Approx 3 oz slivered almonds

  • Approx 3 oz hulled sunflower seeds

  • 1 tablespoon cinnamon

  • 1/2 cup oil

  • 1/2 cup apple juice

  • 1/2 cup maple syrup (if you like it sweeter, add an additional 1/4 cup)

  • 1 teaspoon vanilla extract

  • approx 4 oz coconut flakes/chips

  • 1 cup dried cranberries or chocolate chips

Directions

Prepare the Granola

Preheat oven to 325 Fahrenheit. In a large mixing bowl, mix the first 11 ingredients and spread on a greased baking sheet. Bake for 20 minutes. Add coconut and mix well. Bake again for 10 minutes. (If you prefer your granola more toasted, add time.) Let granola cool in oven with oven door open for about 20 minutes. When cool, add chocolate chips or cranberries and mix.

Tips:

This recipe is so versatile. For example, if you don’t have enough of one nut, add more of something else. If you don’t have maple syrup, it tastes great with honey. I don’t recommend adding both cranberries and chocolate chips; stick with one of those options.
