This salad can be made ahead of time and just gets better the longer it sits. You can serve it at your Yom Tov meal and then snack on it all week.
1/2 cup Gefen Lemon Juice
1/4 cup oil, such as Gefen Canola Oil
1/3 cup sugar
pinch of salt
2 Gefen Beets, cubed
2 green apples, cubed
1 red apple, cubed
1 blood orange, segmented
1 orange, segmented
1 cup roasted walnuts
Add all ingredients to a tightly sealed container and shake until well combined.
Add cooked beets to a large bowl. Add half of the dressing and toss to combine.
Add apples, orange segments and walnuts.
Slowly add remaining dressing, tasting as you go for the desired amount.
