Marinated Beet and Apple Salad

This salad can be made ahead of time and just gets better the longer it sits. You can serve it at your Yom Tov meal and then snack on it all week.

Ingredients

Dressing

  • pinch of salt

Salad

  • 2 Gefen Beets, cubed

  • 2 green apples, cubed

  • 1 red apple, cubed

  • 1 blood orange, segmented

  • 1 orange, segmented

  • 1 cup roasted walnuts

Directions

Prepare the Dressing

1.

Add all ingredients to a tightly sealed container and shake until well combined.

Prepare the Marinated Beet and Apple Salad

1.

Add cooked beets to a large bowl. Add half of the dressing and toss to combine.

2.

Add apples, orange segments and walnuts.

3.

Slowly add remaining dressing, tasting as you go for the desired amount.

No the gefen Beets are vacuum packed

Hi – I’ve seen Gefen beets mentioned in several recipes – are they already cooked in a can?

No, they usually come vacuum packed. They are usually found in the produce section of the supermarket.

They are pre-cooked vacuum sealed.
