3 large beets, or use 1 (17.6-ounce) package Gefen Organic Beets and skip to step 3
juice of 3 lemons or 1/2 cup Heaven and Earth Lemon Juice
6 tablespoons sugar
Preheat oven to 350 degrees Fahrenheit.
Wrap beets in aluminum foil and cook for one hour. Let cool.
When beets are cool enough to handle, peel and cut into eighths.
Combine beets with lemon juice and sugar. Refrigerate in an airtight container until ready to serve.
