There is always a certain satisfaction in checking things off your to-do list. Preparing a marinated salad is the perfect way to get your head start.
1 (14–16-oz)(400 g–450 g) bag coleslaw mix
1 cup shredded purple cabbage
1 cup shredded carrots
2 Granny Smith apples, unpeeled, sliced into 1-inch (2.5-cm) matchstick pieces
2 stalks celery, diced
1/2 cup cashews
1/2 red onion, diced
1/2 cup sugar
1/2 cup cider vinegar
1/2 cup oil
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon pepper
Place coleslaw mix, carrots, and purple cabbage into a large mixing bowl.
Pour all dressing ingredients into a small saucepan and bring to a boil over medium heat. Pour dressing over the cabbage mixture and allow to cool.
Add apples, cashews, dried cranberries, and red onion. Stir well.

What can be substituted for the cider vinegar- the taste is very strong?.
If you don’t enjoy the taste of vinegar, I would substitue for some lemon juice instead to add some acidity. I would probably start with around 1 freshly squeezed lemon and see if you need more.
