I love this salad—there is so much crunch in every bite! It’s best prepared a day in advance so the vegetables fully absorb the flavors.

Ingredients

Salad

  • 1 small red onion, thinly sliced

  • 1 small red pepper, thinly sliced

  • 1 small yellow pepper, thinly sliced

  • 1 small orange pepper, thinly sliced

  • 1 cup sugar snap peas, halved

  • handful of cherry tomatoes, halved

  • handful of baby carrots, quartered into matchsticks

Marinade

  • black pepper, to taste

  • pinch of crushed red pepper

Directions

1.

Place all vegetables in a bowl. Combine marinade ingredients and mix well. Pour over vegetables and mix.

Store in an airtight container for up to three days.
