A quick and easy meatloaf recipe baked in muffin cups and topped with a delicious sauce.
Yield: 12 muffin cups
1 and 1/2 pounds ground beef
1/3 cup Yehuda Matzo Meal
1/2 small onion, diced
1 and 1/2 tablespoons barbecue sauce, such as Gefen
3/4 tablespoon mustard
1/2 teaspoon paprika
3/4 teaspoon garlic powder
1 and 1/2 teaspoons chili powder
3/4 teaspoon salt
3/4 teaspoon black pepper
1 egg, beaten
1/2 cup Glicks Ketchup
1 and 1/2 teaspoons mustard
1/4 cup Haddar Brown Sugar
1/4 teaspoon black pepper
1 tablespoon barbecue sauce, such as Gefen
Preheat oven to 350 degrees Fahrenheit.
In a large bowl, mix all meatloaf ingredients until combined.
Place mixture evenly in a 12–cup muffin pan and flatten nicely.
Bake for 15 minutes.
While the meatloaf is in the oven, mix all sauce ingredients in a small bowl.
Remove the meatloaf from the oven and spread the sauce evenly over each muffin cup.
Bake for an additional 15 minutes or until cooked through.
