This salad can cater to many different diets: GF, Vegan, etc. It’s Pareve so you could serve it for your Shabbat crowd. Quick and Easy to make.
Empty out cans of beans and corn. Rinse and let it drain. Add to cooled cooked quinoa.
Cut up avocado in 1-inch cubes and add the rest of the ingredients together. Mix and enjoy.
