If you prefer your cookies crispy, you’ll want to give these a try. The oats and crispy rice cereal give these cookies a satisfying crispy texture.
2 sticks margarine, softened (or use 1 stick margarine and 1/2 cup oil)
1 cup sugar
3/4 cup brown sugar
2 cups flour
1/8 teaspoon salt
1/2 teaspoon Haddar Baking Powder
1/4 teaspoon Gefen Baking Soda
6 tablespoons water or juice
1 teaspoon Gefen Vanilla Extract
2 cups oatmeal
1 cup Rice Krispies cereal
8 to 10 ounces mini chocolate chips
Preheat oven to 350 degrees Fahrenheit.
In a large mixing bowl, beat margarine and sugars until well blended.
Sift flour, salt, baking powder, and baking soda into a bowl. Mix. Alternately add this mixture and the liquid ingredients (water or juice, and vanilla) to the margarine mixture.
Gradually add oatmeal, Rice Krispies, and chocolate chips into the mixture.
Drop by rounded teaspoonfuls, one and a half inches apart, onto greased cookie sheets.
Bake for 15 minutes.
