1 (22-ounce) package Kineret Brownie Batter
2 cups confectioners’ sugar
1/2 cup (1 stick) margarine, at room temperature (use soy-free if needed)
3/4 teaspoon mint extract
a few drops green food coloring
1 cup chocolate chips or 2 (3- and- 1/2-ounce) Geneve Chocolate Bars, chopped
6 tablespoons margarine or coconut oil
thin mints, chopped
fresh mint leaves, for garnish
Bake brownie batter according to package instructions. Let cool.
In the bowl of an electric mixer, combine frosting ingredients. Spread on cooled brownie.
Melt the chocolate. Combine chocolate and margarine in a microwave-safe bowl. Melt in microwave on 30 second intervals, stirring in between, until smooth. Spread on top of frosting. Top with chopped thin mints and fresh mint.
