This delicious brisk ice cream is just right for a simcha dessert. The mint is light and refreshing after a heavy meal. Garnish with a chocolate leaf for extra effect.
7 eggs, separated
1 (16 oz.) container Gefen Whipped Topping or other dessert topping
3/4 cup confectioners’ sugar
1/2 cup sugar
1 teaspoon Gefen Vanilla Extract
2 teaspoons mint extract
1 cup Glicks Chocolate Chips, “crumbed” in food processor
green food coloring
Combine egg whites with sugar and beat to make snow.
Whip the dessert topping until stiff. Add yolks, confectioners’ sugar, and vanilla extract. Mix.
Add remaining ingredients by hand; combine with snow. Freeze.
