Ingredients

Minted Cranberry Orange Relish

  • 1 pound bag cranberries, fresh or frozen

  • 1 bunch mint, cleaned, leaves only

  • 1 orange, skin and all, quartered

  • 1/2 cup lime or lemon juice

  • 3/4 cup sugar

  • 1/2 teaspoon cayenne pepper, or to taste

  • salt, to taste

Directions

1.

In a food processor, coarsely grind the cranberries, mint and orange, using the pulse button so the mixture remains chunky. Add all remaining ingredients and pulse until just combined.

Notes:

Makes about two cups. Store refrigerated in a glass jar.
