Being on a diet almost all my life, I struggled greatly when it came to overnight potato kugel! (Drooling as I’m typing! That smell…..) My mom came up with this recipe and I tweaked it until it resembled overnight kugel. Now, no cravings anymore!
1 24-oz. bag cauliflower florets, defrosted
5 eggs
3/4 cup oil
1 tsp salt
1/4 tsp black pepper
1/4 tsp white pepper
Preheat the oven to 450 degrees F. Combine all ingredients in a food processor fitted with the S blade, until almost smooth. Grease a 5-lb bekelah with cooking spray and bake for 1 hour. Lower heat to 250 degrees F, cover bekelah well and bake overnight.

Can you freeze this?
Some people don’t like to freeze potato kugel and some people do. If you don’t mind freezing it, this one would freeze.
