My mother was an amazing cook and she worked in various camps and schools for over 30 years. This was her signature apple cake that we waited for every Rosh Hashonah.
1 and 3/4 cups sugar
3 eggs
1 and 1/2 cups oil
1/8 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon cinnamon
3 cups flour
3 cups sliced apples
Mix the sugar, eggs, oil, salt, baking soda, vanilla, and cinnamon.
Add the flour and sliced apples.
Pour into two greased nine-inch round pans and bake on 350 for 45 minutes to an hour.
