Mozzarella and Cucumber Salad Sandwiches with Garlic Dressing

Ingredients

Mozzarella and Cucumber Salad Sandwiches

  • 4 pita breads

Avocado Spread

  • 1 ripe avocado

  • Lawry’s Garlic Salt (or simply salt and garlic powder), for sprinkling

  • juice of 1/2 lemon

Mozzarella and Cucumber Salad

  • 1/2 finely diced English cucumber

  • 1 finely diced red pepper

  • 1/4 small red onion, finely diced

  • 1/2 cup chopped fresh parsley

  • 4 ounces fresh mozzarella, diced

  • juice of 1/2 lemon

  • 1/2 teaspoon salt

Garlic Dressing (or store bought garlic basil dressing)

Directions

Prepare the Mozzarella and Cucumber Salad Sandwiches

1.

Prepare the avocado salad: Combine all ingredients and mash until combined but still chunky.

Prepare the mozzarella salad: Combine all ingredients.

3.

Prepare the dressing: Combine all ingredients.

4.

To assemble, spread avocado inside pita sandwiches.

5.

Stuff with mozzarella salad and drizzle with dressing.
