Ingredients

Mushroom Barley Soup

  • 2 large grated carrots

  • 2 zucchini, diced or grated

  • 3 stalks celery, chopped

  • 1 box button mushrooms, sliced

  • 1 1/2 cups barley

  • salt and pepper

  • 1 box baby bella mushrooms, sliced

  • 1 box shitake mushrooms, sliced

  • mushroom soup mix

  • chicken soup mix

Directions

Prepare the Mushroom Barley Soup

1.

Sauté carrot, zucchini, celery, and mushrooms until tender.

Add barley, salt and pepper, 2 Tbsp mushroom soup mix, 2 Tbsp chicken soup mix.

3.

Add water to fill and bring to a boil and allow to simmer for about 1 1/2 hours. This is for a 10 quart pot.
