Easy and yummy soup
2 large grated carrots
2 zucchini, diced or grated
3 stalks celery, chopped
1 box button mushrooms, sliced
1 1/2 cups barley
salt and pepper
1 box baby bella mushrooms, sliced
1 box shitake mushrooms, sliced
mushroom soup mix
chicken soup mix
Sauté carrot, zucchini, celery, and mushrooms until tender.
Add barley, salt and pepper, 2 Tbsp mushroom soup mix, 2 Tbsp chicken soup mix.
Add water to fill and bring to a boil and allow to simmer for about 1 1/2 hours. This is for a 10 quart pot.
