Mushroom-Cheese Calzones

I absolutely love the combination of mushrooms and cheese. Put it together with soft pizza dough and you have utter perfection!   Yield: 15–20 small calzones

Ingredients

Dough

  • 1 tablespoon oil

Filling

  • 1 tablespoon oil

  • 1 (10-ounce) box white mushrooms, diced

  • 1 medium onion, diced

  • 1 clove garlic, crushed or 1 cube Gefen Frozen Garlic

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 2 cups shredded cheese

Directions

Prepare the Dough

1.

In a bowl, mix together dough ingredients until a nice dough forms. Allow to rise for about 20 minutes. If the dough is very sticky, add some more flour.

Notes:

Temperature and humidity level affect the dryness of the dough. In the winter you will likely need to add more water since the air is dryer, and in the summer you’ll probably need to add more flour due to the humidity.

Prepare the Filling

In a medium-size frying pan, heat oil and add diced vegetables. And garlic and spices and sauté for 10–15 minutes or until vegetables are soft. Transfer to a bowl and allow to cool.

2.

Once the mixture has cooled, add shredded cheese.

Assembly

1.

Preheat oven to 400 degrees Fahrenheit. Line a cookie sheet with Gefen Parchment Paper.

2.

Roll out the pizza dough and cut four-inch rounds (I used the rim of a glass).

3.

Place one teaspoon of the mushroom-cheese mixture onto each round. Fold in half to create a moon shape and pinch closed.

4.

Bake for 15 minutes.

Tips:

For a shortcut, use store-bought dough instead of making your own.

Dough is really tasteless. Pity because it looks so yummy! I even added salt when I made it….

There are so many ways to add flavor to dough if you try this recipe again. Some popular options are garlic powder, onion powder, dried oregano, dried basil, and grated Parmesan cheese. You can also add a bit of olive oil or honey to the dough for extra richness and depth of flavor.
