I find it crucial to keep the freezer stocked with whole grain muffins. That way, my teenage girls and even my little ones can grab a quick breakfast (zapped in the microwave) before running for the bus. And even when they’re running on time, they take them as a filling snack (or lunch) for later in the day. Prepare the Muffins

Preheat oven to 350 degrees Fahrenheit. Grease a muffin pan with nonstick cooking spray.

Combine flour, oats, cinnamon, baking powder, baking soda, and salt. Add applesauce, honey, egg, oil, and vanilla. Mix well. Stir in chocolate chips.

Pour batter into muffin pan. Bake for 20 minutes.

Modify for a less sweet version
This recipe is a winner. I can never have enough in the freezer! My kids grab 1 or 2 on the way to school in the morning, for breakfast, snack or lunch! When I made it the first time we found it too sweet. Following is how I modified it and we love it, its still sweet enough. I always triple the recipe. I put in a TOTAL of 1 Cup of Honey. and 1 Cup of Chocolate chips. Occasionally i'll skip the chocolate chips and add a spoonful of chopped apples into the center of each muffin...
