No-Bake Chocolate Cheesecake

Cheesecake is a delicious indulgance all year round, but is most connected with the holiday of Shavuot, when many Jewish folks celebrate by preparing dairy meals. Here is a very simple and basic no-bake cheesecake with chocolate topping that anyone can prepare. For more delicious cheesecakes like this one, see our post The Ultimate Cheesecake Roundup.

Prepare the Crust

1. In a food processor with a steel blade, grind the biscuits into a thin powder.
2. Add melted butter and process into a crumbly mixture.
3. Press the crumbs into the base and on the sides of a greased 24-centimeter (nine- and- a- half-inch) springform pan to form a crust.
4. Cool the crust in the freezer for about 10 minutes.

Prepare the Cheese Cream Filling

1. In a mixer bowl, whip together cheese, powdered sugar, vanilla extract, instant pudding and whipping cream until you get a smooth and firm cream.
2. Pour the cream into the base and level the top. Cool in the refrigerator for at least an hour to set.

For a richer version, you can use mascarpone cheese instead of regular cream cheese.

For the Ganache Topping

1. Break the chocolate into squares and put in a bowl.
2. Add whipping cream and melt together in a microwave or on a Bain-Marie until everything is melted and the mixture is smooth.
3. Pour the coating over the cheese layer and straighten the top.
4. Cool for half an hour in the refrigerator until the coating sets.
5. Decorate with chocolate.
