Diets 1 cup vegetable or avocado oil
1 cup coconut sugar
2 teaspoons vanilla extract
1 teaspoon baking soda
1 teaspoon salt
2 eggs
2 tablespoons cornstarch
2 and 1/2 cups (spelt) flour
chocolate chips if you want
Preheat oven to 375 degrees Fahrenheit. Line two baking sheets with parchment paper. Set aside.
In a bowl, beat together oil and sugars until smooth and creamy.
Add vanilla, baking soda, eggs, salt, and cornstarch. Beat well until combined. Add flour and beat until just combined.
Add chocolate chips if desired, to the cookies.
Using a medium cookie scoop or a heaping tablespoon, or using your hands, form the cookies.
Bake at 375 degrees Fahrenheit until done. Do not overbake.
