This salad yields the perfect balance of sweet, salt, and crunch. The components are so flavorful, you could even serve it with no dressing! I did include a dressing, if only to blend the ingredients and bring the mix together.
1 cup shredded red cabbage
1/4 cup Gefen Dried Cranberries
1/4 cup salted cashews
1/4 cup dried mango, chopped
3 tablespoons Gefen Olive Oil
1 tablespoon Haddar Brown Sugar
1 and 1/2 teaspoons Gefen Peanut Butter
1 and 1/2 teaspoons Glicks Soy Sauce
In a small bowl, whisk dressing ingredients until smooth.
In a wide shallow bowl or plate, place the bed of red cabbage. Arrange nuts and fruit in stripes and drizzle dressing over. Toss lightly before serving.
