Directions
1. Preheat oven to 375 degrees Fahrenheit.
2. Slice beets into thin rings and place in a 9×13-inch pan together with shallots. Toss with oil and bake covered for 20 minutes. Uncover and roast for 10 minutes.
3. In a small bowl, whisk together dressing ingredients.
4. Place couscous, lettuce, orange, beets, shallots, and sunflower seeds in a bowl. Toss with dressing and serve.
