Our Favorite Kokosh Babka

Dough

Filling

  • 1 stick margarine (1/2 cup)

Directions

Prepare the Dough

1.

Place flour, sugar, and yeast in the bowl of your mixer. Add remaining ingredients and knead for eight to 10 minutes at low speed.

2.

Allow dough to rise for 45 minutes, then deflate (punch down) and let it rise a second time for half an hour.

Prepare the Filling

1.

Combine all ingredients and mix well.

Variation:

Other filling options are Rosemarie Spread or Cinnamon Shmear, available at The Peppermill or on our website.

Shape and Bake

1.

Grease and flour three eight-inch or nine-inch loaf pans. Preheat oven to 350 degrees Fahrenheit.

2.

Divide dough into three equal parts. Working with one piece, roll out to an eight- x 12-inch rectangle. Spread with one third of the filling over the dough, edge to edge. Starting at the short edge, roll up so you have an eight-inch roll.

3.

Cut the roll down the center of the length. From the top end, gently twist one side over the other until the whole piece is twisted. Place in prepared pan.

4.

Repeat with remaining two pieces of dough.

5.

Bake for 40 to 45 minutes or until golden. Remove from oven and cool slightly before removing from pan.

Why do you need eggs in the filling mixture

It’s a great question! The eggs help bind the filling together and keep it soft and rich when it bakes.
