Marinate
Cut salmon into one-and-a-half-inch (four-centimeter) cubes or slightly larger chunks. Pat dry with paper towel.
In a small bowl, mix brown sugar, maple syrup, hot honey, soy sauce, mustard, garlic, and black pepper.
Toss salmon cubes gently in the glaze. Marinate for at least two hours, or overnight for best flavor.
