Diets If you’re ready for something different and creative this Chanukah, these Asian-style vegetable latkes may be right up your alley. Including flavorful ingredients like green onion, ginger, garlic, and mint, and a recipe for an umami/sweet dipping sauce. 2 zucchinis
2 medium-to-large carrots
1-2 teaspoons freshly minced ginger or 1-2 cubes Gefen Frozen Ginger
1-2 cloves garlic
2 green onions, sliced
2 eggs
1/3 cup flour
1 teaspoon kosher salt
freshly ground Gefen Black Pepper
oil, for frying (I use grapeseed)
1 tablespoon Glicks Soy Sauce
1 tablespoon Gefen Maple Syrup
1 tablespoon hoisin sauce
1 tablespoon rice vinegar
sriracha hot sauce
sweet Thai chili sauce
fresh mint
green onion
chopped peanuts
Grate zucchini and carrots. Place into kitchen towel and squeeze out liquid.
Mix together with ginger, garlic, green onion, eggs, flour, salt and pepper.
Heat oil in a large frying pan over medium-high heat. Once oil bubbles when you insert a wooden spatula, it is hot enough to fry.
Form patties and fry until nicely browned on both sides.
Mix together ingredients for sauce.
Serve latkes topped with dipping sauce, sweet chili sauce, chopped fresh mint, chopped green onions, peanuts, and a squeeze of lime juice.
