These lemon ices are a wonderful dessert for a Shabbat meal. These ices are sweet, not tart, with the perfect amount of lemon flavor. The consistency is smooth. The more you blend it, the silkier it will become.
6 egg whites (use pasteurized eggs)
9 tablespoons sugar
2 cups water
juice of 2 lemons
1/2 cup orange juice
3 yolks (use pasteurized eggs)
Beat egg whites until stiff.
Add sugar gradually and beat until stiff peaks form.
Add remaining ingredients, beating at low speed until well mixed. Freeze.
When partially frozen, beat with mixer until smooth. Pour into individual serving cups. Freeze until ready to serve.
Yield: 8 servings
