These parsnip chips are surprisingly tasty and look beautiful on the side of any dish.
Peel slices of the parsnip (press hard to get long, thick pieces).
Spread out on lined cookie sheet.
Brush with a mixture of olive oil, salt, pepper, and parsley.
Bake on 350 for approximately 5 minutes. Careful – they burn fast!
