Ingredients

Passover Mayonnaise

  • 2 eggs

  • 3 cups oil

  • 1 teaspoon salt

Directions

Prepare the Mayonnaise

1.

In the bowl of a food processor, process eggs on high speed for five minutes.

2.

With the processor still running, very slowly add oil, then salt, sugar, and lemon juice.

3.

Continue processing until emulsified.

worked beautifully with two cups of oil, added in extremely slowly while emulsifying

I wasted 3 cups of oil and the recipe was horrendous. The entire thing turned into one huge oily liquid mess. I tried to add another egg afterwards to maybe get it to finally emulsify but nothing helped. Awful and a huge waste of expensive Pesach oil.
