A vibrant summery pasta dish filled with fresh herbs, nutty pistachios, and sweet zucchini!
1 (12-ounce) box Heaven & Earth Gluten Free Brown Rice Pasta
2 tablespoons Tuscanini Olive Oil
2 medium zucchinis, roughly chopped
1 shallot, chopped
3 cloves garlic, such as Mr. Dipz Peeled Garlic, roughly chopped
1/2 cup parmesan cheese, grated, plus more to serve
1/2 cup fresh parsley, packed
1/2 cup fresh basil, packed
1/3 cup fresh dill, packed
1/3 cup shelled raw pistachios, divided
1/2 teaspoon lemon zest
Bring a large pot of salted water to boil. Cook the Heaven and Earth Gluten Free Brown Rice Pasta until al dente, about eight to nine minutes. Reserve one cup of pasta water. Drain and return to the pot.
In a large skillet, heat the oil over medium heat. Add the zucchini, shallot, and garlic, cooking for 12 to 16 minutes, or until golden.
Transfer the vegetables to a blender or food processor, and add the parmesan cheese, parsley, basil, dill, 1/4 cup pistachios, and lemon zest, blending until smooth.
Add the blended sauce to the pasta and pour in the pasta water 1/4 cup at a time, mixing until the sauce becomes smooth and coats the pasta.
To serve, garnish with the remaining pistachios and cheese.
