Diets I love having these granola bars around. Making them at home means I know exactly what’s in them, and I feel better knowing my kids are getting a nutritious snack. Plus, they have chocolate and peanut butter, my favorite flavor shidduch.
3 cups old-fashioned oats
1/2 cup chopped unroasted peanuts
3 tablespoons Gefen Unsweetened Cocoa Powder
1/2 teaspoon kosher salt
3/4 cup Gefen Honey
1/2 cup coconut oil, melted
1/2 cup natural peanut butter
1/2 cup mini chocolate chips
1/2 teaspoon Gefen Vanilla Extract
Preheat oven to 350°F. Line an 8- x 8-inch baking pan with Gefen Parchment Paper.
In a large bowl, combine the oats, peanuts, cocoa powder, and salt. Add the honey, coconut oil, peanut butter, chocolate chips, and vanilla. Mix until well incorporated.
Firmly press the mixture into the prepared pan and bake at 350°F for 40 minutes. Remove from oven and immediately cut into two-inch squares. Allow to cool completely, since the bars firm up as they cool.
To help the bars hold their shape, store in the refrigerator for up to five days.
