These peanut butter bites are the perfect high protein snack to have on hand when you need a little something sweet and satisfying.
1/2 cup 100% (natural) peanut butter, such as Haddar
1/4 cup–1/2 cup Gefen Honey, organic maple syrup, or agave syrup
1 cup shredded coconut
1/2 cup flaxseed meal
1 teaspoon Gefen Vanilla Extract
1/2 cup mini chocolate chips (65% cocoa or higher)
In a medium bowl, mix together peanut butter, honey, coconut, flaxseed, vanilla extract, and chocolate chips.
Form the batter into balls and freeze.
