Dissolve coffee, sugar and vanilla extract in hot water. Dip each lady finger into coffee mixture for a few seconds. Break in half and place both halves in the jar.
Beat whipped topping, peanut butter, and confectioners’ sugar together until whipped. Pipe or layer with a spoon on top of ladyfingers. Repeat with ladyfinger layer followed by another layer of cream.
Top with chocolate shavings (can be created with a peeler).
